I understand your frustration in trying to extend your display to three screens Are both monitors connected through the same type of port, and have you checked settings > system > display If you need help setting up your external monitors, see how to use multiple monitors in windows

If you’re having trouble setting up multiple monitors on surface, see troubleshoot connecting surface to a second screen.
One monitor is built into my laptop, one is connected via the laptop's hdmi port, and the third is connected via a usb to hdmi extender
All 3 monitors are recognized when i go into display setting, and i can see my desktop on all three monitors. Upon connecting, windows 11 by default will mirror your main display To change this so you can utilize the second screen for other purposes, press windows key + p on your keyboard. Click on the detect button to see if windows can find the second monitor
Use the keyboard shortcut win + p to open the projection options Select extend to set up the monitors as separate screens Make sure that your graphics drivers are up to date You can check for updates through the device manager.
If your computer is not detecting multiple displays after reconnecting them, you can try the following steps
Ensure that all cables are securely connected to both the laptop and the monitors Press windows + p and select the display mode you want (e.g., extend, duplicate). It looks like windows 11 is duplicating your two extra monitors
